Barley Noodles Salad


  • Barley Noodles (400ml - 2 Watercup)
  • A Bunch of Parsley
  • Hot Water (400ml - 2 Watercup)
  • Pinch of Salt 
  • Pinch of Fresh Mint 
  • Cornicon Pickles (15 Pieces)
  • 1/2 Lemon Juice (Half)
  • Pomegranate Sour (1 Tablespoon)
  • Olive Oil (2 Tablespoon)
  • Carrot (2 Pieces)
  • Cucumber (2 Pieces)
  • Green Pepper (3 Pieces)
  • Canned Corn (200 Gr)
  • Scallion (100 Gr)    

How To Make Barley Noodles Salad? Delicious Anatolian Vegan Salad

     1.When starting salad with barley noodles, firstly put olive oil in the pot and roast the noodles until they lightly roasted.

     2.Add 2 watercup of boiling water to the roasted noodles and close the lid of the pot to cook.

    3.When the noodles drain, open the lid of the pot to rest and cover the mouth of the pot with a cloth and close the lid again and wait 15 minutes for it to cool down.

   4.While the noodles are getting cold with the lid closed, let’s prepare the ingredients to be put in the salad.

  5.So first, let’s wash the carrot and peel them.

  6.Then let’s grase the carrots into the glass bowl.

  7.Let’s chop the cornicon pickles and cucumbers squarely and put them in carrots.

  8.Let’s chop the peppers and fresh onions in the same way and put them in mixture bowl.

  9.Then let’s clean the persley, finely chop it and put it in the bowl with other ingredients and mix it with a spoon.

 10.After mixing all these ingredients well, let’s take the rested and cooled barley noodles into the bowl and mix.

 11.After the barley noodles, let’s add the canned corn into the mixes after washing it thorougly and mix it again.

 12.Finally, let’s add pomegranate sour, salt, lemon juice and olive oil and blend. If you want, you can add different spices according to your taste.In order to sweeten and decorate the salad we take on the serving plate, we can sprinkle fresh mint leaves on it and serve it to the service.
