Couscous - Vegan Anatolian Recipe


  • Couscous (500gr)
  • Olive Oil (4 Tablespoons)
  • Eggplant (1 Piece)
  • Carrot (1 Piece)
  • Red Pepper (1 Piece)
  • Cherry Tomato (5 Pieces)
  • Salt (1/2 Teaspoon)
  • Turmeric (1/4 Teaspoon)
  • Black Pepper (1/4 Teaspoon)
  • Parsley (50gr)
  • Water (1L - 5 Watercups)

How to Cook Couscous? Vegan Anatolian Delicious Spicy (Recipe)

  1. Add water in pot and boil.
  2. Add couscous in pot and wait 20minutes.
  3. Drain water from pot and take couscous from pot to large bowl.
  4. Wash eggplants and cut cubic shapes.
  5. Peel the carrot and cut cubic shapes.
  6. Cut red pepper cubic shapes.
  7. Cut cherry tomatoes cubic shapes.
  8. Add olive oil in pot and turn on medium heat.
  9. Add carrots, eggplants, red pepper and tomatoes in pot, then stir and roast well. (5 Mins.)
  10. Add salt, black pepper and turmeric in pot and stir well.
  11. Add couscous in pot and stir more.
  12. Cook with low heat while stirring. (5 Mins.),
  13. Turn off the heat and chop parsley top of the meal.
  14. It is ready! Serve it hot or cold!
