Roasted Potato - Vegan Anatolian Recipe
Ingredients:
- Potato - Medium Size (6 Pieces)
- Onion - Medium Size (1 Piece)
- Olive Oil (2 Tablespoons)
- Tomato Paste (1 Tablespoon)
- Chopped Parsley (2 handfull)
- Salt (2 Teaspoon)
- Black Pepper (1 Teaspoon)
- Water (1 Liter)

- Wash potates then peel.
- Boil peeled potatoes in pot with 1 liter water.
- After it boils, boil 20 minutes more.
- Cut cubic shapes to potatoes.
- Chop parsley coarse.
- Add oil in pot.
- Chop onions fine.
- Add onions in pot. Cook until onions get pinkish color.
- Add tomato paste in pot and stir well.(at least 30sec stirring)
- Add cubic potatoes and chopped parsley in pot.
- Add salt and black peper in pot. Then stir well.
- Cook 2 minutes.
- Roasted Potato is ready! Serve it with Tea.
