 Roasted Potato - Vegan Anatolian Recipe

Ingredients:

  • Potato - Medium Size (6 Pieces)
  • Onion - Medium Size (1 Piece)
  • Olive Oil (2 Tablespoons)
  • Tomato Paste (1 Tablespoon)
  • Chopped Parsley (2 handfull)
  • Salt (2 Teaspoon)
  • Black Pepper (1 Teaspoon)
  • Water (1 Liter)

  1. Wash potates then peel.
  2. Boil peeled potatoes in pot with 1 liter water.
  3. After it boils, boil 20 minutes more.
  4. Cut cubic shapes to potatoes.
  5. Chop parsley coarse.
  6. Add oil in pot.
  7. Chop onions fine.
  8. Add onions in pot. Cook until onions get pinkish color.
  9. Add tomato paste in pot and stir well.(at least 30sec stirring)
  10. Add cubic potatoes and chopped parsley in pot.
  11. Add salt and black peper in pot. Then stir well.
  12. Cook 2 minutes.
  13. Roasted Potato is ready! Serve it with Tea.
