 Sourish Soup - Vegan Anatolian Traditional Soup

Ingredients:

  • Wheat (400ml - 2 Watercup)
  • Lentil (100ml - 1 Teacup)
  • Canned Chickpea (100ml - 1 Watercup)
  • Onion (3 Pieces)
  • Garlic (7 Cloves)
  • Olive Oil (50ml - 1/2 Teacup)
  • Dried Peppermint (1 Teaspoon)
  • Paprika Powder (1 Teaspoon)
  • Salt (2 Teaspoon)
  • Sumac Extract or Pomegranate Syrup (1 Tablespoon)
  • Eggplant (3 Pieces)

How to Cook Sourish Wheat Soup? Traditional Anatolian Nutritional Soup (Recipe) 

  1. Add wheat and 3 watercup of water. Do it 1 night before cooking or boil 20 minutes.
  2. Boil wheat, chickpea and lentil in pot.
  3. Chop eggplant finely.
  4. Add eggplant in pot.
  5. Add olive oil in pan.
  6. Chop onions coarsely and roast in pan until onions get pinkish color.
  7. Add peppermint and paprika powder in pan and stir more.
  8. Then add sumac extract and salt in pan, stir more.
  9. Crush garlic cloves and put it in pan then stir again.
  10. Add all ingredients inside the pot and stir.
  11. Boil the soup.
  12. Sourish nutritional soup is ready!
