Ginger Squash Soup

 Ginger Squash Soup -  Anatolian Vegan Soup


  • Squash (4 Pieces)
  • Onion (1 Piece Medium Size)
  • Fresh Ginger (1/5 Piece)
  • Broccoli (1/4 Piece)
  • Water (4 Watercup)
  • Olive Oil (4 Tablespoons)
  • Vegetable Margarine (2 Tablespoons)
  • Salt (1 Teaspoon)
  • Black Pepper (1 Teaspoon)

How to Cook Ginger Squash Soup? Anatolian Vegan Soup

  1. Wash the squash and broccoli well.
  2. Peel and finely chop the onion. Chop the squash into thick slices. Then seperate the broccoli into its flowers. Peel and grate the ginger.
  3. Put olive oil and vegetable margarine in a deep saucepan. Lightly tease. Add the chopped onions and sauté. Then add the squash and saute some more. 
  4. Add water on it. After the vegetables are cooked for 7-8 minutes, add the broccoli. Then add the ginger.
  5. When all the vegetables are soft, add salt and pepper and turn off the heat.
  6. Grind all the vegetables with the help of a hand blender. Take it back to the stove. Let it thicken a little more. 
  7. When the consistency thickens, turn off the heat and serve hot.
